White Chocolate and Cherry fruit loaf
Nina Timm graciously shared her favourite fruit loaf recipe with us.
250 ml butter - at room temperature
250 ml brown sugar
250 ml self raising flour
100 ml greek yogurt
100 ml Safari Raisins
100 ml Safari Almond slivers
100 ml glazed cherries
100 ml white chocolate Chips a pinch of salt
125ml Orange juice and 2 teaspoons of sugar
Pre-heat oven to 180 C. Place the butter and sugar in the bowl of your electric mixer and mix until it is light and fluffy. Add the eggs and mix for another minute or two. Fold in the yogurt and lastly fold in all the other dry ingredients. Spoon into a loaf tin that you have lined with baking paper. Bake for 35 - 40 minutes or until a skewer comes out clean when inserted into the loaf. In a small saucepan heat up the orange juice and sugar. Once the sugar has dissolved pour over the fruit loaf.
Makes 1 loaf
