Cashew and Macadamia Nut Pesto


250ml (150g) Safari roasted cashew and macadamia nuts
4 x 20g packets of fresh basil
4 garlic cloves
375ml good quality parmesan cheese, finely grated
3ml Maldon salt
Approx. 30ml lemon juice
125ml virgin olive oil
125ml sunflower seed oil


  • In a food processor place the nuts, basil leaves,garlic, cheese and salt.  Pulse until roughly chopped.
  • Add the rest of the ingredients and blitz until combined.
  • Serve with pasta, toasted ciabatta bread or as a dip
  • Yields 6-8 portions
