Brown Rice with dried fruit nuggets

250 ml Brown & Wild Rice
750 ml water
3 ml salt
125 ml Safari Raisins and Cranberries
125 ml Safari Dried Pears - Cut into thin slivers
a handful fresh mint - chopped
zest of 1 lemon


Cook the rice according to the packet instructions and cool.  Add the chopped fruit, lemon zest and mint and mix. Serve either hot or cold with the Fruity Lamb Pinwheels.
