Crunchy Granola

Recipe from: I Love Cooking


3 x 250 ml large-flake oats
100 g Safari Flaked Almonds
100 g Safari Pecan Nuts, roughly chopped
180 ml seeds of your choice (pumpkin, sunflower, sesame or flax)
180 ml desiccated coconut
90 ml Muscovado brown sugar
5 ml table salt
90 ml honey
90 ml sunflower or canola oil
250 ml Safari Dried Fruits of your choice (apple rings, peaches, apricots, prunes or dates or a combination of all or some), roughly chopped
250 ml Safari Seedless Raisins or Golden Sultanas


Place the oats in a large mixing bowl and stir in the nuts, seeds, coconut, sugar and salt. Add the honey and oil and mix lightly (the clumping will be the crunchy large pieces of granola) then transfer to one or two deep baking trays.

Bake for 30 – 45 minutes in the oven preheated to 180º C stirring and tossing the mixture every 8 – 10 minutes to ensure that it does not burn or brown too much. The coconut, especially can burn rather quickly.

When the mixture is toasted enough to your liking, remove from the oven and allow to cool. Then place it in a large mixing bowl, stir in the dried fruits and raisins and transfer to an airtight container or containers.

Enjoy with stewed dried or fresh fruit, honey and milk or yoghurt.
