Baking: Sweet

Raisin Loaf


1 batch sweet dough
1 1/2 cup (375ml) SAFARI raisins
1 egg and 15 ml milk for egg wash


Prepare a medium loaf pan with greaseproof spray or butter and flour
On a lightly floured surface, roll the dough out to about 20cm x 30cm
Spread the raisins out even over the dough
Roll the dough up from the shortest side
Carefully place it, seam side down, in the prepared loaf tin
Preheat the oven to 180C
Cover and leave to double in size for 45 minutes to 1 hour
Wash with egg wash
Bake for 45 minutes or until golden and done
