Wessel's Bread Pudding

Wessels van Vuuren is now popularly known as the “pin-up” boy in the Koekedoor kitchen. Koekedoor season 2, is a follow-up on kykNET’s baking series screened on DSTV. When Wessels lived in England, he often cooked recipes from the legendary cookbook, Mrs Beeton’s Cookery and Household Management. This cookbook has over 170 recipes for desserts and puddings, amongst them Spotted Dick. Wessels made his own “Spotted Dick”, but this time, a bread pudding rich in sultanas and currants, with added citrus peel and extra egg yolks. Cranberries and raisins can also be added


15 slices white bread, crusts removed
Butter for greasing
75 g currants
50 g sugared citrus peel
75 g yellow sultanas
Zest of 1 lemon
1 whole nutmeg, grated
250 g (1 cup) castor sugar
4 eggs
2 egg yolks
600 ml milk
300 ml cream
Castor sugar to sprinkle over the top


1. Preheat the oven to 180º C. Grease a 2 litre ovenproof baking dish.
2. Line the bottom of the dish with overlapping slices of bread. Top with some currants, some sultanas, citrus peel and grate nutmeg over the top. Repeat until all the bread and fruit is used up.
3. Beat the sugar, eggs and egg yolk together with the milk and pour over the bread and dried fruit mixture. Set aside for 30 minutes.
4. Bake for an hour until set. Sprinkle the sugar over the top of the hot pudding and serve with custard, ice cream or cream.
