Fruity Chocolate Squares

Recipe from: I Love Cooking


250 g butter
300 g icing sugar
100 ml cocoa powder
2 extra-large egg yolks
5 ml Moir’s Vanilla Essence
60 g Moir’s Coconut
120 g Safari Cake Mix
70 g Moir’s Cherries (chopped)
¾ packet Moir’s Marie Biscuits (150 g), broken into small pieces
extra coconut for sprinkling


Place butter in a saucepan and melt over medium heat. Sift in the icing sugar and cacao. Stir well over the heat to dissolve icing sugar partly (approx. 5 minutes). Transfer the mixture to a mixing bowl and set aside to cool a little.

When cooled, whisk in the yolks and vanilla essence. Now add the coconut, Safari cake mix and cherries.  Lastly add the broken Marie Biscuits.

Press into a dish and smooth the top with the back of the wooden spoon. Leave in the fridge to set.

To serve, cut into 4cm squares and sprinkle with coconut.

Yields about 24 squares
