Spicy Ginger Fruit Loaf

125 g butter or margarine
80 ml treacle or caramel sugar
125 ml white sugar
60 ml golden or caramel syrup
500 ml cake flour
5 ml baking powder
5 ml bicarbonate of soda
1 ml salt
10 ml ground ginger
8 ml ground cinnamon
2 extra-large eggs
125 ml milk
80 ml Safari Fruit Mincemeat
50 g Safari Pecan Nuts, coarsely chopped (optional)


Heat the butter, treacle sugar, white sugar and syrup in a small heavy-based saucepan. Heat gently, stirring occasionally until the butter has melted. Set aside

Sift the flour, baking powder, bicarbonate of soda, salt and spices into a mixing bowl. Beat eggs and milk together. Add to flour mixture, alternatively with the melted sugars. Add fruit and nuts and mix well until combined.

Spoon into a greased 22.5 cm loaf tin and bake in a preheated oven at 160° C for about 50 minutes or until done.

Makes one loaf

For 12 muffins, spoon mixture into greased muffin pans, filling each three quarters full. Bake in a preheated oven at 180° C for about 25 minutes.
