Brandy Tart

Recipe from: SAFARI A fruity little cookbook


250 ml Safari Pitted Dates or prunes
5 ml bicarbonate of soda
250 ml boiling water
250 ml sugar
1 beaten egg
2 ml salt
500 ml cake flour
5 ml baking powder
125 ml cherries
415 ml Safari Seedless Raisins or Sultanas
250 ml Safari Walnuts, chopped
435 ml sugar
250 ml water
15 ml butter
60 ml brandy


Cut up dates (or prunes), add bicarbonate of soda and pour hot water over it. Allow to cool. Add sugar, egg and salt. Add dry ingredients, fruit and nuts.

Bake for 20 – 30 minutes at 180° C.

For the sauce, boil together sugar, water and butter. Add brandy and pour over the tart.

Serve with whipped cream.
