500 ml Sasko flour
10 ml baking powder
2 ml salt
125 ml sugar
50 g Safari to go Nut and Berry Burst, coarsely chopped
50 g Safari to go Fruity Medley, coarsely chopped
50 g Safari to go Carnival Craze, coarsely chopped
2 medium eggs
250 ml milk
75 ml sunflower oil
5 ml vanilla essence
100 g dark chocolate, coarsely chopped
Preheat the oven at 200 ºC.
In a large bowl, sift the flour, baking powder and salt together. Add the sugar and the chopped Safari to go Nut and Berry Burst, Safari to go Fruit Medley and Safari to go Carnival Craze.
In a separate bowl, mix the eggs, milk, oil and vanilla essence and add to the dry ingredients, stirring to combine. Spoon the mixture into a muffin pan lined with muffin paper cases, filling each cavity ¾ full. Bake for 20-25 minutes.
Once completely baked, remove from the oven, remove the muffins from the pan and press chocolate pieces into the hot muffins. Place on a wooden board or a plate to cool or serve immediately.
