Cashew Pesto

  • 1/2 cup SAFARI Raw Cashews
  • 2 cups Basil Leaves
  • 1/2 cup Grated Parmesan
  • 1 Garlic Clove, chopped
  • 1/4 cup Lime Juice
  • 1/2 cup Extra Virgin Olive Oil


  1. Place basil, cashews, parmesan, garlic and lime juice in a food processor.
  2. Pulse until chopped.
  3. With motor running, gradually add oil.
  4. Process until well combined.
  5. Place in an airtight container and refrigerate for up to 4 days.
